How fast you serve, what you cancel, what you waste, and whether the drawer balances.

The figures

Fulfilment time is the promise you are keeping
Compare it against the preparation time you advertise in Settings. If you promise 30 minutes and average 45, the number to change is the promise — a longer estimate you meet earns better reviews than a short one you miss.
The fulfilment speed chart shows it per day, so a bad week is distinguishable from a bad kitchen.
Cancellations
A cancellation rate that climbs is one of the earliest signs something is wrong, and the daily chart usually names the day it started. The common causes are stock the menu did not know had run out, and orders accepted outside your real capacity.
Drawer variance
Per closed session: expected, counted, and the difference. It is the only figure here that depends on somebody doing a task properly — the drawer has to be opened at the start and closed at the end.

Waste
Per stock item: how much was wasted and over how many entries. It is the number most restaurants have never seen, and it is often larger than the promotion they are agonising over.
It only works if waste is actually recorded in Inventory. Waste that is thrown away without an entry appears as margin that vanished.
The staffing clock
Order volume by weekday and hour together. This is the rota chart: it shows the Friday-at-seven peak that an hourly average flattens away. Read it beside the money clock on Sales — busiest and most profitable are not always the same hour.

Orders per weekday. The simplest chart here and the one that most often changes opening hours.
When it doesn't work
Fulfilment time looks impossible
It measures placed to completed. Orders left open on the kitchen board until the end of service inflate it — the fix is on the board, not in the report.
Drawer variance is empty
No sessions have been closed. It needs an opened and closed drawer shift.
Waste is zero and I know it is not
Waste is not being recorded. Nothing infers it.
Self-service share is zero
No kiosk or till orders in the period — see Devices.
